Fresh Fruit Salad Recipes


Fruit salad recipes can be especially good for you – or NOT! And most are NOT! Here you'll find a healthy fresh fruit salad recipe, rich in antioxidant fruits, for every occasion.

These five fresh fruit salad recipes are sugar-free, low in fat, low in food calories and high in antioxidant benefits. They're also rich in healthy high fiber foods from the list of fruits.

The benefits of antioxidants in these fruit salad recipes include slowing down the aging process, preventing and even reversing cancer and heart disease and strengthening the immune system. Plus each fresh fruit salad recipe is so very yummy!

Over the Rainbow Fresh Fruit Salad

Ingredients:
  • 3 C mixed berries (blueberries, raspberries, strawberries)

  • 2 C seedless grapes (red or green)

  • 2 crisp sweet apples

  • 3 peaches, nectarines or 6 apricots

  • 2 bananas, sliced thin

  • 1 C freshly squeezed orange juice (3 Valencia oranges)

  • Nutmeg (optional)
Directions:
  1. Chop fruit and mix gently in large bowl.

  2. Pour fresh orange juice over fruit, stir and refrigerate.

  3. Serve with dash of nutmeg.
Yields: about 10 cups.Calories: about 105 per cup.

Cinnfull Apple Fruit Salad Recipe

This fresh fruit salad recipe has a traditional creamy cinnamon apple flavor, without the high calories, fat and sugar of most cinnamon apple desserts.



Ingredients:
  • 4 crisp sweet apples

  • 2 bananas, sliced thin

  • 2 sweet pears

  • ½ cup raisins

  • 1 cup unsweetened apple juice

  • 1 cup plain low-fat yogurt

  • ¼ tsp. lemon juice

  • 1 tsp. vanilla extract

  • ½ tsp. cinnamon

  • Sliced roasted almonds (optional)
Directions:
  1. Pour raisins into juice and refrigerate overnight. Also refrigerate all uncut fruit overnight.

  2. Chop fruit shortly before serving and mix in large bowl.

  3. Fold in yogurt, lemon juice, apple juice with raisins, vanilla and cinnamon.

  4. Sprinkle each serving with sliced almonds.
Yields: about 9 cups.

Calories: about 135 per cup (add 45 calories for 1 Tbs. sliced almonds).

Fresh and Tangy Fruit Salad Recipe

This light and refreshing fruit salad is great all by itself (or sprinkled with walnuts) at breakfast or any other time you want a fresh and tangy taste treat.

Ingredients:
  • 3 medium red or pink grapefruits, peeled and sectioned

  • 3 medium crisp sweet apples

  • 2 sweet pear

  • Chopped walnuts (optional)
Directions:
  1. Cut fruit and mix in large bowl.

  2. Refrigerate until ready to serve.

  3. Top each serving with chopped walnuts.
Yields: about 9 cups

Calories: About 90 per cup (add 50 calories for 1 Tbs. chopped walnuts)

Tropical Paradise Fruit Salad



Add a taste of paradise with this delicious tropical fresh fruit salad recipe.

Ingredients:
  • 1 peeled, cored pineapple (3 cups diced)

  • 3 mangos (3 cups)

  • 2 papaya (2 cups)

  • 3 ripe kiwi

  • 2 C sliced strawberries

  • 2 bananas, sliced thin

  • 1 juiced Valencia orange (about 1/3 cup)

  • Unsweetened shredded coconut (optional)
Directions:
  1. Squeeze orange and make a sauce in blender by mixing orange juice with 1 cup chopped strawberries and 1 cup chopped mango.

  2. Peel, chop and mix rest of fruit in large bowl. Pour sauce over fruit and mix.

  3. Sprinkle coconut over each serving.
Yields: about 10 cups

Calories: about 115 per cup (add 35 calories for 1 Tbs. shredded coconut)

Rich and Dreamy Fruit Salad

Besides high fiber antioxidant fruits, this rich, creamy and delicious fresh fruit salad recipe adds some valuable protein and calcium to your fruit delight.

Ingredients:
  • 4 cups blueberries or mixed berries

  • 6 sweet ripe peaches, nectarines or 12 apricots

  • 4 bananas, sliced thin

  • 2 cups low-fat or non-fat yogurt

  • 2 teaspoons vanilla

  • Chopped pecans (optional)
Directions:
  1. Combine fruit in large bowl.

  2. Fold in yogurt, cover and refrigerate until served.

  3. Sprinkle with pecans or low-fat granola.
Yields: about 9 cups

Calories: about 130 per cup (add 55 calories for 1 Tbsp. chopped pecans)
