Peas and Cheese Sauce
Peas are one of the more high-carb vegetables, being naturally full of sugar. But if you save them for an occasional treat, they make an incredibly tasty dish.
Ingredients:
1 can peas
2 Tbsp butter
1/3 cup cream
1 Tbsp shredded swiss
1/2 cup shredded cheddar
dash salt
dash pepper
dash garlic powder
Cook the peas and then drain them. For the sauce, melt the butter and cream in a saucepan. Over low heat, add in the swiss and cheddar cheese, plus salt, pepper and garlic. The sauce should be soupy and not caramelly. Blend the peas in with the sauce and serve.
Note if you have fresh garlic, then instead of using the garlic powder you can cut up a clove of garlic and saute that first in the butter.
makes 4 servings
10g per serving
Note that if you're still in the beginning stages of your low carb diet and can't spare 10g, use the same sauce over broccoli, cauliflower or asparagus.
