Slow Cooked Irish Stew

Slow Cooked Irish Stew

  • 2 T. vegetable oil
  • 3 pounds boneless lamb - cut into 1-1/2" cubes
  • 2 cups sliced onions
  • 3 cups sliced potatoes
  • 1-1/2 cups sliced carrots
  • 1 cup cubed turnips
  • 1/2 cup chopped parsley
  • 1 tsp. salt
  • water

Preparation -
Heat the vegetable oil in a skillet. Add the lamb cubes and brown lightly. Place the lamb plus all the vegetables in a large crockpot. Sprinkle with salt. Add just enough water to cover the ingredients. Cover the crockpot and cook on low for 8 to 10 hours.
