Preparation -
Preheat a gas grill for high heat or prepare a charcoal grill with hot coals. Lightly oil the grate or spray it with non-stick cooking spray. Using a strong kitchen shears or a large butcher knife, split the lobster tails lengthwise. Whisk the melted butter and olive oil together in a small bowl. Whisk in the lemon juice, paprika, minced garlic, salt and pepper. Brush the meat on the 8 lobster tail halves with the marinade. Let stand for about 3 to 5 minutes, then place the lobster tail halves, meaty side down, on the preheated grill. Grill for about 10 to 12 minutes, turning after about 5 or 6 minutes, and basting the lobster meat with the remaining marinade. The lobster tails are done when the meat is opaque. Serves 4.
