Sugar n' Spice Sweet Potatoes

Crushed pineapple, golden raisins, coconut and chopped pecans make this sweet potato casserole recipe perfect for a holiday dinner side dish.

  • 1 large can (40 oz.) sweet potatoes, drained
  • 1 can (8 oz.) crushed pineapple, drained
  • 1/4 cup orange juice
  • 1/4 cup brown sugar
  • 1/4 cup golden raisins
  • 1/4 cup flaked coconut
  • 1/4 cup chopped pecans
  • 1 tsp. pumpkin pie spice
  • 1 tsp. salt

Preparation -
Spray a large (2 to 3 quart) casserole dish with non-stick cooking spray; set aside. Mash the sweet potatoes in a large mixing bowl. Add the crushed pineapple, orange juice, brown sugar, golden raisins, coconut, chopped pecans, pumpkin pie spice and salt. Pour the mixture into the preapared casserole dish. Bake, covered, in a preheated oven at 350º for 20 minutes. Remove the cover and bake uncovered for an additional 20 minutes.
