Carrot - Raisin Salad

Carrot-Raisin Salad

  • 1-1/2 cups peeled and coarsely shredded carrots
  • 1-1/2 cups diced apple
  • 1/3 cup raisins
  • 1/2 cup low fat sour cream
  • 1/3 cup milk
  • 1 T. lemon juice
  • 1 T. sugar
  • 1/4 tsp. cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp. allspice

Preparation -
Combine the carrots, apples, and raisins; set aside. Whisk the remaining ingredients together to make the dressing. Stir the dressing into the carrot mixture. Refrigerate for at least one hour before serving. Serve chilled.
